Red Vanilla Cupcakes with Ghost Piped Buttercream

Start by adding the butter, sugar, vanilla and milk into a mixer. Turn it on and mix on a medium to high speed for a minute.

Next add in the eggs and mix again. It may look a little curdled but don’t worry. It’ll all come together next.

Now, add in the self raising flour and mix until just combined. Lastly, drop in a little red food colouring and mix until a lovely red cake batter has been achieved.

Split evenly between 12 cupcakes. I like to use an ice cream scoop for this as it makes it so easy! Bake in a preheated fan oven at 160 for 20-25 minutes or until cooked.

Once cooled, scoop out a small bit of cake from the centre and fill with red jam. For an extra halloween look, add a little red food colouring into your jam too! Then pop the little bit of cake back on top.

Finally, finish with some buttercream circles (no nozzle needed!) and pipe some black eyes and a scary mouth with some black buttercream.
