To celebrate the highly anticipated release of PETER RABBIT™ 2, only at cinemas. Why not create a fully edible carrot garden of your own! This cake recipe could hardly be easier, so it’s perfect for making with the children, adults and even Peter Rabbit himself will want to join in on the fun! (Just keep an eye on those carrots!)
Chocolate and Carrot Cake
- Preheat the oven to 180c / 160c fan.
- Grease a 23cm x 33cm (9x13 inch) cake pan, and line it with baking parchment.
- Weigh the the flour, cocoa powder, baking soda, and salt to a mixing bowl and then set aside.
- Either grate the carrots finely, or put them into a food processor and blitz to small pieces.
- Place the carrots into a large mixing bowl, along with the vegetable oil, caster sugar and eggs.
- Whisk the wet ingredients together until evenly blended, then use a fine mesh sieve to sift the dry ingredients on top.
- Use the whisk to bring the cake batter together, then scrape it into the prepared cake pan.
- Bake the cake for about 45 minutes, until the middle of the cake springs back lightly when pressed.
- Cool in the tin for 15 minutes, then transfer to a wire rack to cool completely.
Chocolate Cream Cheese Frosting
- Use an electric hand whisk to combine the cream cheese and butter in a mixing bowl.
- Sift the icing sugar and cocoa powder over the top, and incorporate on a low speed.
- When the frosting is nice and smooth, use an offset spatula to spread all over the cooled cake
- To decorate the cake, finely grate some chocolate all over the top to create the appearance of soil.
- Cut the cake into 3 rows of 6, to create 18 individual cakes.
- Colour the marzipan with the orange food colouring, and roll into small 1cm balls.
- Flatten these out slightly, and insert a small sprig of rosemary into the top.
- Place a marzipan ball or two on the top of each cake, to give the appearance of carrot tops.
