Method

Make the jam by heating the berries in the microwave for two minutes. Mash or blend the berries and then add the chia seeds. Mix together and leave to cool and thicken.

In a large bowl, mix together the flour, milk, egg yolk, peanut butter and jam until smooth.

In a separate bowl whisk the egg white until it forms soft peaks. Fold into the pancake batter.

Heat a non-stick frying pan over a medium heat. Add a tbsp of pancake batter to the pan to make small pancakes.

Once bubbles form on the top of the pancakes, flip them over and cook for one minute on the other side.

Once all pancakes are cooked, they are delicious on their own, but for an indulgent breakfast the littles ones will enjoy, stack them on a plate with more jam, peanut butter and berries.

Fred's Tip

Whisking the egg white separately creates beautifully light, fluffy pancakes! But you can skip this step if you’re pressed for time - they will still be delicious!
