Method
2. In a large bowl or stand mixer, cream together the softened butter, caster sugar, and light brown sugar until smooth and fluffy.
3. Add the egg and stir it in until fully combined.
4. Mix in the mincemeat and chocolate chips (or chunks) until evenly distributed.
5. Add the Homepride plain flour, mixing gently until a dough forms.
6. Roll the dough into balls—8 large or 12 medium, depending on your preference. For smooth, flat cookies, roll the dough into perfect balls. For a chunkier, "New York-style" look, loosely shape the dough into rougher balls.
7. Place the dough balls onto the prepared baking tray, spacing them well apart to allow for spreading. If you prefer cookies that hold their shape better, chill the cookie dough balls in the fridge or freezer for at least 30 minutes before baking (this step is optional). You can also freeze the dough balls at this stage and bake at a later date.
8. Bake in the preheated oven for 8-10 minutes if baking from room temperature, or 12-15 minutes if baking from chilled or frozen. The cookies should be lightly golden around the edges. Keep an eye on them, as they can overbake quickly.
9. Leave the cookies to cool on the baking tray, allowing them to set before dusting with icing sugar for a festive touch.
