Method

To make the Brownie

Preheat oven to 160 C Fan.

Add the dark chocolate and butter to a small saucepan and place over a medium-high heat, gently stir until melted completely. Remove from heat and set aside to cool.

Sift cocoa powder, salt and Hompride Plain Flour into a bowl and set aside
Add the sugars, eggs and vanilla into a medium sized bowl. Using an electric hand whisk, mix on a medium-high speed until foamy.

Fold the cooled chocolate into the egg mixture. The fold in the sifted cocoa powder and flour until combined.

Fold in the chopped chocolates or chocolate chips.

Pour the brownie batter into a greased and lined 8inch round baking tin.

Bake for 30-35mins (In the meantime, prepare the frosting. See method below).

Once baked, remove from the oven, allow to cool for 10 minutes then place in the fridge for a minimum of 1 hour, until set and completely cold.

To make the Cream Cheese Frosting

In a bowl, combine the butter, salt and icing sugar using a hand whisk. Add in the cream cheese and mix until smooth.

Add a few of green food colouring to the frosting and mix.

Fill a piping bag fitted with a small start nozzle (or nozzle of choice) with the frosting and set aside.

To make the Brownie Trees

Carefully snap a candy cane into pieces approximately 5cm long.

Take a brownie slice and carefully push the candy cane pieces into the curved edge of the brownie.

Pipe the cream cheese frosting into the brownie, decorate with sprinkles (have fun with piping different designs).

Repeat the above steps to each brownie slice and enjoy!
