Method
1. Mix together the butter, caster sugar and mixed peel
2. Add in the Homepride plain flour
3. Knead the dough into a ball, wrap in cling film and chill for 30 minutes
4. Roll out to ¼” thick and cut out circles using a cookie cutter
5. Lay these on a baking tray lined with greaseproof paper and chill for another 30 minutes
6. Bake at 180C for 15-20 minutes or until golden brown
7. When the biscuits are cool, melt 200g dark chocolate and add in a little oil to make it a pourable consistency
8. Dip half the biscuit into the chocolate and tap on the side of the bowl to remove any excess
Leave to set and enjoy!
