Chocolate & Mixed Peel Shortbread Biscuits

These little biscuits quite literally melt in the mouth - the perfect treat whatever the weather. Recipe kindly provided by Britt Box.






1. Mix together the butter, caster sugar and mixed peel

2. Add in the Homepride plain flour

3. Knead the dough into a ball, wrap in cling film and chill for 30 minutes

4. Roll out to ¼” thick and cut out circles using a cookie cutter

5. Lay these on a baking tray lined with greaseproof paper and chill for another 30 minutes

6. Bake at 180C for 15-20 minutes or until golden brown

7. When the biscuits are cool, melt 200g dark chocolate and add in a little oil to make it a pourable consistency

8. Dip half the biscuit into the chocolate and tap on the side of the bowl to remove any excess

Leave to set and enjoy!

Fred's Tip

If you prefer a lighter chocolate, you could mix half dark with half milk chocolate
